Oven Gyros

Slice the chicken breast into thin strips, mimicking gyros meat.

Chop the bell pepper and red onion into thin strips.

In a large bowl, combine the chicken strips with olive oil, dried oregano, garlic powder, smoked paprika, ground cumin, salt, and black pepper. Toss until the chicken is evenly coated.

Heat a large oven-safe skillet (cast iron works great) over medium-high heat. Add the seasoned chicken and cook for 5-7 minutes, stirring occasionally, until it's nicely browned.

Add the chopped bell pepper and red onion to the skillet with the chicken. Continue to cook for another 3-5 minutes, stirring, until the vegetables are slightly softened but still retain a bit of their crispness.

Crumble the feta cheese evenly over the chicken and vegetable mixture in the skillet.
