Tomato Omelette with Feta

Whisk the eggs in a bowl with a pinch of salt and pepper until well combined.

Heat the olive oil in a non-stick pan (about 8-inch or 20cm) over medium heat.

Add the spinach and cherry tomatoes to the pan. Sauté for 1-2 minutes until the spinach slightly wilts and tomatoes soften.

Pour the whisked egg mixture into the pan over the vegetables. Tilt the pan to spread the eggs evenly.

Cook for 2-3 minutes, or until the edges of the omelette begin to set. Sprinkle the crumbled feta cheese over one half of the omelette.

Carefully fold the omelette in half using a spatula. Cook for another 1-2 minutes, or until the cheese is slightly melted and the egg is fully cooked through.
