Preparation

1
Preheat your oven to 200°C (400°F). Drain and rinse the canned chickpeas. Toss them with the olive oil, a pinch of salt, and a pinch of black pepper on a baking sheet. Roast for 15-20 minutes, or until crispy. Set aside.
2
While chickpeas roast, prepare the dressing. In a blender, combine the raw cashews (if not pre-soaked, soak in hot water for 10 minutes and drain), nutritional yeast, lemon juice, Dijon mustard, capers, garlic clove, a pinch of salt, and a pinch of black pepper. Add 3 tablespoons of water. Blend until completely smooth and creamy, adding more water one tablespoon at a time if needed to reach your desired consistency.
3
Wash and chop the romaine lettuce. Place it in a large bowl. Pour the creamy vegan Caesar dressing over the lettuce and toss gently to coat evenly.
4
Top the dressed lettuce with the crispy roasted chickpeas. Serve immediately and enjoy your healthy, high-protein vegan Caesar salad!
