Potato Soup with Cauliflower & Broccoli

Wash and peel the potatoes. Cut them into 1-inch cubes. Wash the cauliflower and broccoli, then cut them into small florets. Peel and finely chop the onion and garlic.

Heat the olive oil in a large pot or Dutch oven over medium heat. Add the chopped onion and cook until softened, about 3-5 minutes.

Add the minced garlic and cook for another minute until fragrant, being careful not to burn it.

Stir in the cubed potatoes, cauliflower florets, and broccoli florets. Pour in the vegetable broth. Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 15-20 minutes, or until the vegetables are very tender.

Once cooked, carefully transfer about half of the soup to a blender and blend until smooth and creamy. Alternatively, use an immersion blender directly in the pot to blend about half of the soup, leaving some chunks for texture.

Return the blended portion to the pot (if using a regular blender). Season the soup with salt and black pepper to taste. Serve hot.
