While tofu cooks, trim the woody ends off the asparagus spears. You can either steam the asparagus for 3-5 minutes until tender-crisp, or blanch them in boiling salted water for 2-3 minutes, then immediately transfer to an ice bath to retain their vibrant color. Drain well.
