Finely chop the onion and mince the garlic. Slice the mushrooms.

Heat the olive oil in an oven-safe, non-stick skillet (about 8-inch or 20cm) over medium heat. Add the chopped onion and cook until softened, about 3-4 minutes. Add the minced garlic and sliced mushrooms, cooking until the mushrooms are tender and lightly browned, about 5-7 minutes. Stir in the packed spinach until it has wilted.

In a medium bowl, whisk the eggs with salt and pepper until well combined.

Pour the whisked egg mixture evenly over the vegetables in the skillet, making sure the vegetables are well distributed.

Return the skillet to the stovetop on low-medium heat for 2-3 minutes, just until the edges of the frittata begin to set.
