Heat 1 teaspoon of olive oil in a non-stick pan over medium heat. Add the diced chicken and cook until fully cooked through and lightly browned, about 5-7 minutes. Remove chicken from the pan and set aside.

While the chicken cooks, finely chop the bell pepper and onion.

Add the chopped bell pepper and onion to the same pan (add a tiny bit more oil if needed). Sauté for 3-5 minutes until vegetables are tender-crisp.

Whisk the eggs in a small bowl with a pinch of salt and pepper. Pour the whisked eggs into the pan with the vegetables. Scramble until cooked to your liking.

Warm the whole wheat tortilla in a dry pan or microwave for 15-20 seconds until pliable.
