Preparation
1
Preheat your oven to 160°C (325°F). Line an 8x8 inch (20x20 cm) baking dish with parchment paper, leaving an overhang on the sides for easy removal.
2
In a large bowl, mash the ripe bananas well until smooth.
3
Add the mashed bananas, natural peanut butter, honey, and vanilla extract to the bowl. Stir well until all the wet ingredients are combined.
4
Add the rolled oats, whey protein powder, chia seeds, chopped almonds, and salt to the bowl with the wet mixture. Stir thoroughly until all the dry ingredients are fully incorporated and everything is evenly coated.
5
Spoon the mixture into the prepared baking dish. Press it down firmly and evenly with the back of a spoon or your hands to compact it well. This helps the bars hold their shape.
6
Bake for 20-25 minutes, or until the edges are golden brown and the center is set. The bars will still be soft when hot but will firm up as they cool.
7
Remove the dish from the oven and let it cool completely in the pan on a wire rack. This is crucial for the bars to set properly, ideally for at least 30 minutes to an hour, or even longer.
8
Once completely cooled, use the parchment paper overhang to lift the entire slab out of the dish. Place it on a cutting board and cut into 10 equal bars.
