Spaghetti with Spinach, Feta and Shrimp

Cook spaghetti according to package directions until al dente. Drain, reserving about 1/2 cup (120ml) of pasta water.

While pasta cooks, heat olive oil in a large pan or skillet over medium heat. Add minced garlic and cook for 1 minute until fragrant.

Add shrimp to the pan and cook for 2-3 minutes per side, until pink and cooked through. Remove shrimp from the pan and set aside.

Add fresh spinach to the same pan. Cook, stirring occasionally, until wilted, about 2-3 minutes.

Return cooked spaghetti and shrimp to the pan with the spinach. Crumble feta cheese over the mixture.

Add a splash of the reserved pasta water (start with 1/4 cup/60ml) and lemon juice. Toss everything together until well combined and the feta is slightly creamy. Season with salt and pepper to taste.

Serve immediately.
