Wash and scrub the potatoes. Cut them into 1-inch (2.5 cm) bite-sized pieces. Pat them dry with a paper towel to ensure they crisp up nicely.

In a large bowl, toss the potato pieces with 1 tbsp olive oil, fresh rosemary leaves, 1/2 tsp salt, and 1/4 tsp black pepper. Ensure all potatoes are evenly coated.

Pat the chicken breasts dry. Rub them with the remaining 1/2 tsp salt and 1/4 tsp black pepper. Place the chicken breasts on the other side of the baking sheet, leaving some space between them and the potatoes.
