Rinse quinoa under cold water. Combine quinoa with 1.5 cups (360ml) water in a small saucepan. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes, or until water is absorbed and quinoa is fluffy. Set aside.

While quinoa cooks, pat chicken breasts dry. Season with salt and pepper. Heat olive oil in a skillet over medium-high heat. Cook chicken for 6-8 minutes per side, or until cooked through (internal temperature 165°F/74°C).

Once cooked, remove chicken from skillet and let it rest for a few minutes. Shred or dice the chicken, then toss it with the light BBQ sauce until well coated.

Halve the avocado, remove the pit, and dice the flesh. Squeeze the juice from the lime. Roughly chop the fresh cilantro.

Once quinoa is ready, fluff with a fork. Stir in the lime juice and chopped cilantro.

Divide the lime quinoa into two bowls. Top each with half of the BBQ chicken and diced avocado. Serve immediately.
