BBQ Chicken Pasta Salad

Preparation

1
Cook the whole wheat pasta according to package directions until al dente. Drain and rinse with cold water to cool, then set aside.
2
While the pasta cooks, season the chicken breasts with smoked paprika, garlic powder, salt, and black pepper. Cook the chicken in a pan or grill until fully cooked through (internal temperature 165°F / 74°C). Let it rest for a few minutes, then shred or dice into bite-sized pieces.
3
Dice the red bell pepper and half of the red onion. Drain the corn (if canned). Roughly chop the fresh cilantro.
4
In a large bowl, whisk together the low-sugar BBQ sauce and plain Greek yogurt until well combined.
5
Add the cooled pasta, shredded or diced chicken, diced bell pepper, diced red onion, corn, and chopped cilantro to the bowl with the sauce.
6
Toss everything gently until all ingredients are evenly coated with the BBQ yogurt dressing. Taste and adjust seasoning if needed.
7
Serve immediately or chill in the refrigerator for flavors to meld, especially if making ahead.
