Wash the zucchini, then slice it in half lengthwise. Use a spoon to carefully scoop out the fleshy pulp from the center, leaving about a 1/2 inch border to create 'boats'. Chop the scooped-out zucchini pulp finely.

Heat the olive oil in a large skillet over medium heat. Add the diced onion and bell pepper, cooking until softened, about 5-7 minutes. Stir in the minced garlic and cook for another minute until fragrant.

Add the ground turkey to the skillet, breaking it up with a spoon. Cook until the turkey is fully browned, draining any excess fat if necessary.
