Fresh Frittata

Preparation

1
Preheat your oven to 190°C (375°F).
2
Dice the bell pepper and chop the onion. Halve the cherry tomatoes.
3
Heat the olive oil in an oven-safe, non-stick skillet (about 8-inch or 20cm) over medium heat.
4
Add the diced bell pepper and chopped onion to the skillet. Sauté for 3-5 minutes until softened.
5
Stir in the fresh spinach until it wilts, about 1-2 minutes.
6
In a separate bowl, whisk the eggs with salt and pepper until well combined.
7
Pour the egg mixture over the vegetables in the skillet. Arrange the halved cherry tomatoes evenly on top.
8
Crumble the feta cheese over the frittata mixture.
9
Let it cook on the stovetop for 2-3 minutes until the edges begin to set.
10
Transfer the skillet to the preheated oven and bake for 12-15 minutes, or until the frittata is set and lightly golden.
11
Remove from the oven, let it cool for a minute, then slice and serve.
