Prepare your ingredients: Dice the bell pepper and yellow onion into small pieces. If using bacon, cook it in a pan until crispy, then crumble and set aside. Remove the two largest Romaine lettuce leaves, wash them, and gently pat dry.

Heat a non-stick pan over medium heat. Add a tiny bit of olive oil. Sauté the diced bell pepper and onion for 3-4 minutes until softened.
