Instant Pot Creamy Mushroom and Kale Pasta

Prepare your ingredients by chopping the onion, mincing the garlic, slicing the mushrooms, and roughly chopping the kale.

Set your Instant Pot to 'Sauté' mode. Add olive oil and once hot, add the chopped onion. Sauté for 3-4 minutes until softened.

Add the minced garlic and sliced mushrooms. Sauté for another 3-5 minutes, stirring occasionally, until the mushrooms release their moisture and start to brown slightly.

Turn off the 'Sauté' mode. Add the dry whole wheat penne pasta and pour in the vegetable broth. Ensure most of the pasta is submerged. Do not stir.

Secure the lid on the Instant Pot and set the valve to 'Sealing'. Select 'Pressure Cook' (or 'Manual') on High Pressure for 5 minutes.

Once the cooking cycle is complete, perform a quick release of the pressure by carefully turning the valve to 'Venting'. Once all pressure is released and the float valve drops, open the lid.

Stir in the chopped kale, light plant-based cooking cream, nutritional yeast, salt, black pepper, and dried oregano. Stir gently until the kale wilts and the sauce thickens slightly from the residual heat.
