Peel and chop the pumpkin into 1-inch cubes. Finely chop the onion and mince the garlic and fresh ginger.

In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté for 5-7 minutes until softened and translucent.

Add the minced garlic and ginger to the pot and cook for another minute until fragrant.

Stir in the chopped pumpkin cubes and vegetable broth. Bring the mixture to a boil, then reduce heat, cover, and simmer for 15-20 minutes, or until the pumpkin is very tender.

Remove the pot from heat. Carefully blend the soup until smooth using an immersion blender, or transfer to a regular blender (blend in batches if necessary, being careful with hot liquids).
