Pour in the crushed tomatoes and chicken broth. Stir in the Italian seasoning, salt, and black pepper. Bring the mixture to a gentle boil.

Break the lasagna noodles into 1-2 inch pieces and add them to the pot. Stir well to ensure the pasta is submerged and doesn't stick together. Reduce the heat to medium-low, cover, and simmer for 15-20 minutes, or until the pasta is tender, stirring occasionally.

While the soup simmers, prepare the cheese topping. In a small bowl, combine the ricotta cheese with a pinch of salt and pepper.
