Preparation

Rinse the red lentils thoroughly under cold water in a fine-mesh sieve until the water runs clear. Set aside.

Dice the onion, carrots, and celery into small, even pieces. Mince the garlic.

Heat the olive oil in a large pot or Dutch oven over medium heat.

Add the diced onion, carrots, and celery to the pot. Sauté for about 5-7 minutes until the vegetables soften.

Stir in the minced garlic, ground cumin, and turmeric powder. Cook for another minute until fragrant.

Add the rinsed red lentils, diced tomatoes (undrained), and vegetable broth to the pot.
