Carrot, Ginger and Coconut Soup

Peel and roughly chop the carrots, onion, and fresh ginger. Peel the garlic cloves.

In a large pot or Dutch oven, heat the olive oil over medium heat. Add the chopped onion and sauté for 3-5 minutes until softened and translucent.

Add the chopped ginger, garlic, and ground turmeric to the pot. Sauté for another 1-2 minutes until fragrant.

Stir in the chopped carrots and vegetable broth. Bring the mixture to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes, or until the carrots are very tender.

Carefully remove the pot from the heat. Using an immersion blender, blend the soup until completely smooth. Alternatively, carefully transfer the soup in batches to a standard blender and blend until smooth. (If using a standard blender, be careful with hot liquids and do not overfill).

Return the blended soup to the pot (if transferred). Stir in the light coconut milk and gently heat through for a few minutes, without boiling.

Season the soup with salt and black pepper to taste.

Ladle the warm soup into bowls. Garnish with fresh chopped cilantro, if desired, before serving.
