Bring a large pot of lightly salted water to a boil.

While the water heats, finely mince the garlic cloves and zest the lemon. Halve the lemon and set aside for juicing.

Add the protein pasta to the boiling water and cook according to package directions until al dente.

Before draining, reserve about 1/2 cup (100ml) of the starchy pasta water. Drain the pasta and set aside.

In the same pot (or a large pan), heat the olive oil over medium-low heat. Add the minced garlic and sauté for 1-2 minutes until fragrant, being careful not to brown it.

Pour in the vegetable broth and the reserved pasta water. Bring to a gentle simmer. Add the lemon zest and the juice from your lemon. Stir well.

Add the cooked protein pasta to the sauce. Toss to coat evenly. Stir in the grated Light Parmesan cheese until it melts and the sauce thickens slightly.

Season with salt and freshly ground black pepper to taste. If the sauce is too thick, add a little more pasta water or broth. If too thin, let it simmer gently for another minute to reduce.
