Cook the whole wheat pasta according to package directions until al dente. Reserve about 1/2 cup of pasta water before draining.

While the pasta cooks, heat the olive oil in a large skillet or pan over medium heat.

Add the minced garlic to the skillet and cook for about 30 seconds until fragrant, being careful not to burn it.

Add the peeled and deveined shrimp to the skillet. Cook for 2-3 minutes per side, or until they turn pink and are cooked through.

Stir in the cherry tomatoes and cook for another 2-3 minutes, until they start to soften slightly.

Add the fresh spinach to the skillet. Cook, stirring occasionally, until the spinach wilts down, which should only take 1-2 minutes.

Add the cooked and drained pasta to the skillet with the shrimp and vegetables. Pour in the lemon juice and a splash of the reserved pasta water (1-2 tablespoons) to create a light sauce. Toss everything together until well combined.
