Preheat your oven to 180°C (350°F). Lightly grease or line an 8x8 inch (20x20 cm) baking dish with parchment paper, leaving an overhang to easily lift out the bars.

In a small bowl, combine the ground flaxseed meal with 6 tablespoons of water. Stir well and let it sit for 5 minutes until it thickens into a gel-like consistency (this is your 'flax egg').

In a large mixing bowl, combine the rolled oats, baking powder, ground cinnamon, and stir to mix the dry ingredients thoroughly.

Grate the apple using the coarse side of a box grater. Squeeze out any excess liquid from the grated apple to prevent the bars from being too wet.

Add the unsweetened applesauce, grated apple, thickened flax egg, and vanilla extract to the dry ingredients. Mix everything together until just combined. Be careful not to overmix.

Pour the mixture into the prepared baking dish and spread it evenly. Press it down gently with the back of a spoon or your hands to form a compact layer.

Bake for 25-30 minutes, or until the edges are golden brown and a toothpick inserted into the center comes out clean.

Remove from the oven and let the bars cool completely in the dish before lifting them out using the parchment paper. Once cool, cut into 8 even bars.
