Wash and halve the bell peppers lengthwise. Remove the seeds and membranes. Place them cut-side up on the prepared baking sheet.

Lightly brush or spray the inside of each bell pepper half with olive oil. Season with a pinch of salt and black pepper.

Bake the bell peppers for 10-12 minutes, or until they are slightly tender but still hold their shape.

While the peppers bake, dice the cherry tomatoes and thinly slice or tear the fresh mozzarella. Mince the garlic and roughly chop the fresh basil.

Remove the bell peppers from the oven. Evenly distribute the diced tomatoes, minced garlic, and mozzarella cheese over each bell pepper half.

Return the baking sheet to the oven and bake for another 8-10 minutes, or until the mozzarella is melted and bubbly.
