Prepare seitan pieces by slicing them into desired 'chicken' cutlet shapes, about 1/2 inch thick.

In a wide, shallow bowl, whisk together the all-purpose flour, cornstarch, nutritional yeast, garlic powder, onion powder, smoked paprika, salt, and black pepper. This will be your dry dredge.

In another shallow bowl, pour the unsweetened plant milk. This will be your wet dredge.

Dip each seitan piece first into the plant milk, ensuring it's fully coated. Let any excess drip off.

Immediately transfer the wet seitan piece to the dry dredge. Press firmly to ensure the coating sticks well to all sides. Repeat this process for all seitan pieces.

Heat the vegetable oil in a large non-stick skillet over medium-high heat. Once hot, carefully place the coated seitan pieces into the skillet, ensuring not to overcrowd the pan. You may need to cook in batches.

Cook for 3-4 minutes per side, or until golden brown and crispy. Adjust heat if necessary to prevent burning.
