Dice the chicken breast into bite-sized pieces. Chop carrots and celery into small pieces. Mince the fresh ginger and garlic. Rinse the quinoa thoroughly under cold water.

Heat the olive oil in a large pot or Dutch oven over medium-high heat. Add the diced chicken and cook until lightly browned on all sides, about 5-7 minutes. Remove the cooked chicken from the pot and set aside.

Add the chopped carrots, celery, minced ginger, and garlic to the same pot. Sauté for 5-7 minutes until the vegetables begin to soften and become fragrant.

Pour in the chicken broth and low sodium soy sauce. Add the rinsed quinoa to the pot. Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 15 minutes, or until the quinoa is cooked and most of the liquid is absorbed.
