In a small bowl, combine the shredded cheddar cheese, garlic powder, and black pepper. Mix well to ensure the spices are evenly distributed.

Drop small spoonfuls (about 1 teaspoon each) of the cheese mixture onto the prepared baking sheet, leaving about 2-3 cm (1 inch) between each mound. You can gently flatten them slightly with the back of the spoon if you prefer thinner crackers.

Bake for 8-12 minutes, or until the edges are golden brown and crispy. Keep a close eye on them as they can go from perfect to burnt very quickly.

Remove the baking sheet from the oven and let the crackers cool completely on the parchment paper. They will crisp up further as they cool. Once cooled, gently peel them off the parchment paper and enjoy!
