Chop the onion, mince the garlic, and dice the carrots and celery.

Heat the olive oil in a large pot or Dutch oven over medium heat. Add the chopped onion, minced garlic, diced carrots, and celery. Sauté for 5-7 minutes until the vegetables begin to soften.

Pour in the fish broth and add the canned diced tomatoes (undrained). Bring the mixture to a gentle simmer.

Carefully add the cod fillets to the simmering broth. Cook for about 5 minutes, or until the cod is almost cooked through and flakes easily.
