Granola with cinnamon and dates

Preparation

Preheat your oven to 150°C (300°F). Line a large baking sheet with parchment paper.

Chop the pitted dates into small pieces. If your almonds are whole, roughly chop them.

In a large bowl, combine the rolled oats, chopped almonds, pumpkin seeds, ground cinnamon, and a pinch of salt. Mix well.

In a separate small bowl, melt the coconut oil. Add the maple syrup and stir until well combined.

Pour the liquid mixture over the dry ingredients. Stir thoroughly until all the oats and nuts are evenly coated.

Spread the granola mixture in a single layer onto the prepared baking sheet.

Bake for 25-30 minutes, stirring gently halfway through, until golden brown and crispy. Keep an eye on it to prevent burning.

Remove from the oven and let it cool completely on the baking sheet. The granola will crisp up further as it cools.
