Preparation

Warm the water to around 40-45°C (105-115°F). It should be warm to the touch, not hot.

In a large mixing bowl, combine the warm water, active dry yeast, and salt. Stir gently and let it sit for 5-10 minutes until the yeast is foamy. This indicates the yeast is active.

Gradually add the whole spelt flour to the yeast mixture, stirring with a wooden spoon or spatula until a shaggy dough forms. Once it's too stiff to stir, use your hands.

Transfer the dough to a lightly floured surface and knead for 8-10 minutes until it's smooth and elastic. If the dough is too sticky, add a very small amount of flour, one tablespoon at a time.

Lightly grease a clean bowl with a tiny bit of olive oil (optional, for easier release) and place the dough in it, turning once to coat. Cover the bowl with a clean kitchen towel or plastic wrap.

Let the dough rise in a warm place for 60-90 minutes, or until it has doubled in size.

Once risen, gently punch down the dough to release the air. Transfer it back to a lightly floured surface and shape it into a loaf.

Place the shaped loaf into a lightly greased (or parchment-lined) standard loaf pan (approx. 9x5 inches).

Cover the loaf pan with the towel again and let it rise for another 30-45 minutes in a warm place, or until it has almost doubled in size.

While the dough is rising for the second time, preheat your oven to 200°C (400°F).

Bake the spelt bread for 30-40 minutes, or until the crust is golden brown and the internal temperature reaches 90-95°C (195-205°F). You can also tap the bottom of the loaf; it should sound hollow.

Remove the bread from the oven and immediately transfer it to a wire rack to cool completely before slicing. This helps prevent a gummy texture.
