Nut-free Granola

Preparation

1
Preheat your oven to 150°C (300°F). Line a large baking sheet with parchment paper.
2
In a large bowl, combine the rolled oats, pumpkin seeds, sunflower seeds, chia seeds, and ground cinnamon. Stir well to mix all the dry ingredients.
3
In a separate small bowl, melt the coconut oil if solid. Add the maple syrup and water to the melted coconut oil and whisk until combined.
4
Pour the wet mixture over the dry ingredients in the large bowl. Stir thoroughly with a spoon or spatula until all the dry ingredients are evenly coated.
5
Spread the granola mixture in an even layer on the prepared baking sheet.
6
Bake for 30-40 minutes, stirring gently halfway through to ensure even browning. The granola should be golden brown and feel dry when ready.
7
Remove the baking sheet from the oven and let the granola cool completely. It will become crispier as it cools.
8
Once fully cooled, stir in the chopped dried apple. Store the finished granola in an airtight container at room temperature for up to 2 weeks.
