Finely dice the onion and mince the garlic.

Heat a large pot or Dutch oven over medium heat. Add the diced onion and cook until softened, about 3-5 minutes. Add the minced garlic and cook for another minute until fragrant.

Pour in the chicken broth and bring it to a gentle simmer. Add the broccoli florets and cook for 10-15 minutes, or until the broccoli is very tender.

Remove the pot from the heat. Using an immersion blender, carefully blend about two-thirds of the soup until smooth, leaving some broccoli florets intact for texture. Alternatively, carefully transfer two-thirds of the soup to a regular blender (vent the lid!) and blend until smooth, then return to the pot.

Return the pot to low heat. Stir in the unsweetened almond milk and gradually add the shredded reduced-fat cheddar cheese, stirring constantly until the cheese is completely melted and the soup is smooth and creamy. Do not boil once the cheese is added, as it can separate.
