Green pea chickpeas with spiced oils

Drain and rinse the canned chickpeas thoroughly under cold water. If using fresh peas, shell them. If using frozen peas, no thawing is needed.

Heat the olive oil in a non-stick pan or skillet over medium heat.

Add the drained chickpeas and frozen green peas to the hot pan. Sauté for 7-9 minutes, stirring occasionally, until the chickpeas are lightly crisped and golden, and the peas are tender-crisp.

Stir in the cumin powder, paprika powder, turmeric powder, salt, and black pepper. Cook for another 1-2 minutes, stirring constantly, until the spices are fragrant. Be careful not to burn the spices.

Remove the pan from the heat. Stir in the fresh lemon juice and the chopped fresh coriander.
