Healthy chicken stir-fry

Cut the chicken breast into bite-sized pieces. Season lightly with salt and black pepper.

Chop the broccoli into small florets and slice the bell pepper into thin strips. Mince the garlic and grate the fresh ginger.

Heat the olive oil in a large wok or skillet over medium-high heat. Add the chicken pieces and cook until browned on all sides and cooked through, about 5-7 minutes. Remove the chicken from the pan and set aside.

Add the minced garlic and grated ginger to the same pan and stir-fry for 30 seconds until fragrant.

Add the broccoli florets and bell pepper strips to the pan. Stir-fry for 4-6 minutes until the vegetables are tender-crisp.

Return the cooked chicken to the pan with the vegetables. Add the gluten-free soy sauce, sesame oil, and water (or chicken broth) to the pan.
