Beef Sweet Potato Curry

Dice the beef into bite-sized pieces, peel and cube the sweet potatoes, chop the onion, and slice the bell pepper. Mince the garlic and grate the fresh ginger.

Heat olive oil in a large pot or Dutch oven over medium-high heat. Add the diced beef and sear until well browned on all sides. Remove the beef from the pot and set it aside.

Add the chopped onion to the same pot and cook, stirring occasionally, until softened and translucent, about 5 minutes. Stir in the minced garlic and grated ginger, cooking for another minute until fragrant.

Stir in the red curry paste and sliced bell pepper. Cook for 2-3 minutes, stirring constantly, to toast the paste and slightly soften the pepper.

Return the seared beef to the pot. Add the cubed sweet potatoes, light coconut milk, and a pinch of salt. Bring the mixture to a gentle simmer, then reduce the heat to low, cover the pot, and let it cook for 20-25 minutes, or until the beef is tender and the sweet potatoes are cooked through.

Stir in the fresh spinach until it wilts into the curry. Squeeze in the fresh lime juice. Taste the curry and adjust seasoning if needed with more salt or lime.
