Baked Cod with Sweet Potatos

Preparation

1
Preheat your oven to 200°C (400°F). Line a baking sheet with parchment paper.
2
Wash and scrub the sweet potatoes, then cut them into 1-inch cubes.
3
In a bowl, toss the sweet potato cubes with 1 tablespoon of olive oil, half a teaspoon of garlic powder, and a pinch of salt and pepper. Spread them in a single layer on one side of the prepared baking sheet.
4
Bake the sweet potatoes for 15 minutes while you prepare the cod.
5
Pat the cod fillets dry with paper towels. Place them on the other side of the baking sheet.
6
Drizzle the cod with the remaining 1 tablespoon of olive oil. Season with the remaining half teaspoon of garlic powder, paprika, salt, and pepper. Squeeze fresh lemon juice over the fillets.
7
Return the baking sheet to the oven and bake for another 12-15 minutes, or until the cod is flaky and cooked through, and the sweet potatoes are tender and lightly browned.
8
Garnish with fresh chopped parsley before serving.
