Place the sweet potatoes directly on the oven rack and bake for 40-50 minutes, or until very tender when squeezed.

While the sweet potatoes are baking, finely chop the onion and bell pepper.

Heat the olive oil in a large non-stick pan over medium-high heat. Add the lean ground beef and cook, breaking it apart with a spoon, until browned. Drain any excess fat.

Add the chopped onion and bell pepper to the pan with the beef. Cook for 5-7 minutes, stirring occasionally, until the vegetables soften.

Stir in the tomato paste, cumin, smoked paprika, and garlic powder. Cook for 1 minute more, stirring constantly.

Add 60ml (1/4 cup) of water and bring to a simmer. Reduce heat to low and let it cook for 5 minutes, allowing the flavors to meld. Season with salt and pepper to taste.

Once the sweet potatoes are baked, carefully slice them lengthwise down the middle, being careful not to cut all the way through.
