Slice the beef against the grain into thin strips. In a bowl, toss the beef with half of the soy sauce, grated ginger, and minced garlic. Let it marinate for at least 5 minutes while you prepare the vegetables.

Wash and chop the broccoli into small florets. Slice the bell pepper into thin strips. Peel and thinly slice or julienne the carrot.

Heat the olive oil in a large skillet or wok over medium-high heat. Add the marinated beef strips and stir-fry for 2-3 minutes until browned on all sides. Remove the beef from the skillet and set aside.

Add the broccoli florets, bell pepper strips, and sliced carrots to the same skillet. Stir-fry for 4-6 minutes, or until the vegetables are tender-crisp. If needed, add a splash of water to help steam the vegetables.

Return the cooked beef to the skillet with the vegetables. Add the remaining soy sauce and sesame oil. Toss everything together for 1-2 minutes until thoroughly combined and heated through.
