Basil Tomato Risotto

Preparation

1
Finely dice the onion and mince the garlic.
2
Heat the olive oil in a large pot or deep skillet over medium heat.
3
Add the diced onion and cook until softened and translucent, about 5 minutes. Stir in the minced garlic and cook for another minute until fragrant.
4
Add the arborio rice to the pot and stir constantly for 1-2 minutes until the edges of the grains become translucent. Do not brown the rice.
5
Pour in 1 cup of vegetable broth. Stir continuously until the liquid is almost completely absorbed by the rice.
6
Continue adding the remaining vegetable broth, one cup at a time, stirring frequently until each addition is absorbed before adding the next. This process usually takes about 20-25 minutes. The rice should be creamy and tender with a slight al dente bite.
7
While the risotto cooks, halve the cherry tomatoes. Gently stir the halved cherry tomatoes and most of the fresh basil leaves (reserving some for garnish) into the risotto during the last 5 minutes of cooking.
8
Season the risotto with salt and black pepper to taste. Remove from heat.
9
Serve immediately, garnished with the reserved fresh basil leaves.
