Chicken Shawarma Salad

Preparation

Slice the chicken breast into thin strips or bite-sized pieces. In a bowl, toss the chicken with the shawarma spice blend, half of the olive oil, and a pinch of salt and pepper. Let it marinate for at least 10 minutes, or longer if time allows.

While the chicken marinates, prepare the vegetables. Chop the mixed greens, dice the cucumber and tomatoes, and thinly slice the red onion. Place them in a large salad bowl.

Heat the remaining half of the olive oil in a non-stick pan over medium-high heat. Add the marinated chicken and cook for 5-7 minutes, stirring occasionally, until it's golden brown and cooked through.

For the dressing, in a small bowl, whisk together the Greek yogurt, lemon juice, minced garlic, and a dash of salt and pepper until smooth.

Add the cooked chicken to the salad bowl with the chopped vegetables. Drizzle the Greek yogurt dressing generously over the salad. Garnish with fresh chopped parsley.
