Chop the green onions, separating the white and green parts. Mince the garlic and grate the fresh ginger.

Whisk the eggs in a small bowl with a pinch of salt and a dash of black pepper.

Heat half of the sesame oil in a large non-stick pan or wok over medium-high heat.
