Blender Pancakes With Maple Apple Compote
Throw everything in a blender and pour straight into the pan. Oats, cottage cheese, and eggs make fluffy pancakes packed with protein, while soft apples simmered in maple syrup and cinnamon replace sugary syrup on top.
Preparation

Peel and core the apples, then cut them into small cubes.

Put the apple cubes in a small saucepan with the maple syrup, cinnamon, and 3 tablespoons of water. Cover and cook over medium-low heat for 10 minutes, stirring now and then, until the apples are soft but still hold their shape. Set aside.

Meanwhile, put the rolled oats, cottage cheese, eggs, milk, baking powder, vanilla extract, and salt in a blender.

Blend on high for 45 seconds until completely smooth, then let the batter rest for 5 minutes so the oats soften and the batter thickens.

Heat a non-stick pan over medium heat and brush it lightly with the coconut oil.

Pour in the batter to form pancakes about 10 cm across. Cook for 2 to 3 minutes, until bubbles appear on the surface and the edges look set.

Flip and cook for another 1 to 2 minutes until golden underneath. Repeat with the rest of the batter, you should get 8 pancakes.

Stack the pancakes on two plates and spoon the warm apple compote over the top.
