Season the chicken breast chunks with salt and pepper.

Heat the olive oil in a large pot over medium-high heat and brown the chicken for about 5 minutes. Remove and set aside.

Add the onion, carrot, and celery and saute for 5 minutes until softened.

Stir in the garlic and tomato paste and cook for 1 minute.

Add the diced potatoes, chicken broth, and bay leaf. Bring to a boil.

Return the chicken to the pot, reduce heat, cover, and simmer for 25 minutes until the potatoes are tender.

Stir in the peas and cook for 3 more minutes. Remove the bay leaf.
