Heat the olive oil in a large pot over medium heat. Add the onion and leek and saute for 5 minutes.

Stir in the garlic and cook for 1 minute.

Add the diced potatoes and carrot, then pour in the vegetable broth.

Bring to a boil, then reduce heat and simmer for 20 minutes until the potatoes are very tender.

Blend about half of the soup with an immersion blender for a creamy texture while leaving some chunks.

Stir in the Greek yogurt off the heat and season with salt, pepper, and nutmeg.
