Indian Lentil Stew
A hearty Indian dal of red lentils simmered with tomatoes, ginger, and warming spices. This vegan, high-protein stew is rich in fiber and plant protein, making it a comforting and budget-friendly dinner.
Preparation

Rinse the red lentils under cold water until the water runs clear.

Heat the coconut oil in a large pot over medium heat. Add the chopped onion and cook until soft.

Stir in the minced garlic, grated ginger, curry powder, turmeric, and cumin. Cook for one minute until fragrant.

Add the rinsed lentils and stir to coat in the spices.

Pour in the chopped tomatoes and vegetable broth. Bring to a boil, then reduce heat and simmer.
