Preheat the oven to 220°C (425°F). Toss the cubed eggplant with 1 tablespoon olive oil and a pinch of salt, then spread on a baking sheet and roast for 20-25 minutes until golden and tender.

Meanwhile, cook the linguine in a large pot of salted boiling water according to package directions until al dente. Reserve 1/2 cup pasta water, then drain.

In a large skillet, heat the remaining olive oil over medium heat and sauté the garlic for 30 seconds until fragrant.

Add the crushed tomatoes, salt, pepper, and chili flakes, and simmer for 10 minutes.

Stir the roasted eggplant and cooked linguine into the sauce, adding a splash of pasta water to loosen if needed.

Toss everything together, then top with grated ricotta salata and fresh basil before serving.
