Mac and Cheese with Spinach
Creamy mac and cheese with wilted spinach stirred through for extra fiber and nutrients — a comforting dinner that sneaks in some greens.
Preparation

Cook the macaroni in a large pot of salted boiling water according to package directions until al dente. Drain and set aside.

In a saucepan, melt the butter over medium heat, then whisk in the flour and cook for 1 minute.

Gradually whisk in the milk, stirring constantly, until the sauce thickens, about 4-5 minutes.

Reduce the heat to low and stir in the cheddar cheese, mustard powder, salt, and pepper until smooth and melted.
